Pumpkin Cake recipe:
1 box of cake mix (I use yellow)
1 small can of pumpkin
1 small container of applesauce (plain single serve)
cinnamon and nutmeg to taste
vanilla to taste
MIX with a mixer till light and fluffly looking (about 2 minutes on HIGH)
Spread into a 9x13 greased baking dish
bake @ 350 degrees for 10 minutes then rotate baking dish cook another 15 minutes and check for doneness w/ toothpick BAKE NO MORE than 28-30 minutes :)
This is SO GOOD and MOIST just plain, but topped with COOL WHIP or whipped cream it is to die for and if you sprinle a little cinnamon on it, it makes a PERFECT presentation :)
